Packed with vibrant veggies, a hint of garlic, and the umami magic of soy sauce, these noodles are both simple to make and irresistibly delicious.

Ingredients

  • 2 (3 ounce) packages soy sauce-flavored ramen noodles with seasoning packets

  • 2 tablespoons vegetable oil, divided

  • 3 large eggs, beaten

  • 2 teaspoons vegetable oil, divided

  • 4 green onions, thinly sliced

  • 1 small carrot, peeled and grated

  • ½ cup green peas

  • ¼ cup red bell pepper, minced

  • 2 tablespoons sesame oil

  • 1 teaspoon sesame oil, or to taste

  • 1 teaspoon soy sauce, or to taste

Directions

  1. Heat a medium pot of water until boiling. Add the ramen noodles, setting aside the seasoning packets, and cook for about 3 minutes or until tender. Drain the noodles and keep them aside.

  2. Heat 1 tablespoon of vegetable oil in a small skillet. Pour in the beaten eggs, and cook while stirring until they are scrambled and firm. Remove from the skillet and set aside.

  3. Warm 1 teaspoon of vegetable oil in a large skillet or wok over medium heat. Sauté the green onions in the hot oil until softened, about 2 to 3 minutes. Transfer the green onions to a plate and set them aside.

  4. Heat the remaining 1 teaspoon of vegetable oil in the same wok or skillet over medium heat. Add the carrots, peas, and bell pepper one at a time, stir-frying each until softened. Transfer them to the plate with the green onions as they finish.

  5. Heat 2 tablespoons of sesame oil and the remaining 1 tablespoon of vegetable oil in the same skillet or wok over medium heat. Add the cooked noodles, stir-frying and tossing frequently, until golden, about 3 to 5 minutes. Season with sesame oil, soy sauce, and the reserved ramen seasoning packets to taste, tossing to coat evenly. Finally, add the cooked vegetables and stir-fry, tossing frequently, until heated through, about 5 minutes.
